There are Buckeyes (those Ohio State peeps), and then there are BUCKEYES (those bite-sized bits of peanut butter and chocolate that bring a little bit of heaven to earth in perfect harmony!). I was introduced to these babies on a New Year’s Eve back in my super-metabolism college days, when I (in)famously devoured an entire plate of them. By myself. Just set that bad boy down by my elbow, let the Trivial Pursuit games begin, and watch them disappear!
Since I am no longer in my super-metabolism college days, it would behoove me to stay off of Pinterest, but then I would never have found these jewels! And given that they travel well in a care package, my college student would have missed out terribly, and we can’t have that! Pinterest stays. And so does this recipe. So without further ado, meet the Buckeye Pretzel Bite!
PEANUT BUTTER “BUCKEYE” PRETZEL BITES
1 cup creamy peanut butter
3/4 cup brown sugar
2 Tbs softened butter
1/2 cup powdered sugar
1 bag of chocolate chips or Ghirardelli chocolate wafers
Line a baking sheet with wax paper and set aside. In mixing bowl, beat peanut butter and butter until combined. Add sugars and mix well. You should be able to roll mixture into small balls without sticking to your hands. If needed, add more powdered sugar until it is easy to roll. Take each ball and sandwich between two pretzels. Place on wax paper. When done, stick in the freezer for a few minutes. Melt the chocolate (I used Ghirardelli chocolate wafers – easier to work with). Dip each pretzel bite halfway into the chocolate and place on wax paper to set. Allow chocolate to set; chill if desired. Enjoy!!
